Frittatas can be made to suit almost every taste
Frittatas are an egg-based Italian dish sort of like a crustless quiche. They can be made to suit almost every taste. Delicious for breakfast, lunch or dinner.
INGREDIENTS
1/2 cup olive oil
2 medium onions peeled and thinly sliced
2 Potatoes peeled and very thinly sliced
1 zucchini thinly sliced
8 mushrooms thinly sliced
1/2 of a red bell pepper, thinly sliced
10 Eggs beaten
Pinch of salt and pepper and any fresh herbs you like
Makes 3 small or one large Frittata
COOKING
Preheat oven to 400 degrees.
Divide the olive oil amongst three baking dishes or one large baking dish.
Place the onions and potatoes in pans and bake for 10 minutes.
Remove from oven and spread veggies of your choice and egg mixture over the pan.
Bake for 15-20 minutes until puffy and golden brown.
Reduce the temp if the eggs are cooking too quickly.
Cool before slicing.
