
With the St. Patrick’s Day holiday right around the corner, will corned beef be part of your celebration on March 17?
Grantville’s Iowa Meat Farms offers house-cured, barrel-aged corned beef by the pound for St. Patrick’s Day and throughout the month of March.
Shortly after Christmas, Siesel’s in Bay Park and Iowa Meat Farms began barrel curing nearly 5,000 pounds of the USDA Choice beef. In 50-gallon barrels, the trimmed meat joined a brine composed of salt, sugar, curing salt, garlic, and other spices. Unlike the ‘commercial’ corned beef, sodium phosphate was not used.
Iowa Meat Farms offers three different cuts of the corned beef: rounds ($9.99/lb), point cut ($9.99/lb), and brisket ($12.99/lb).
